Today we fly to Seim Reap, Cambodia. The flight was delayed so we had to fill our day with a morning bike ride (Mike and I opted to stay at the Four Seasons instead to pack & relax). Checked out of the hotel and went to a cooking class taught by Lulu. She started working for Vy when she was 13 years old. The above photo is the cookbook we purchased for $32. Buying it on Amazon would have cost $110 because of shipping costs!
This lady showed us how they prepped papaya to make salad, or other dishes with the vegetable.
I was impressed with the organization of this class. Teachers notice this kind of preparation!
My spring roll is delicious, just not tightly wrapped like the pros!
Silk worm larvae slightly toasted
Lulu preps the ingredients for the next dish. Not sure what it is officially called but it did have the silk worm larvae with added toppings and I TRIED it. Reminded me of something thick & paste like. I tried NOT to think about the flavor!

Backroads recommended this book before we left for our trip. I ordered it online and didn't read much of it before we left. There is a very interesting chapter on Vy and how she started her restaurants.
Basket Boat rides with beer, music & laughter.
The basket boat was first used/invented by the Vietnamese people to avoid taxes by the French.
The boats are easy to maneuver and can easily go out to meet a larger boat and be a life raft.
A bit of relaxation before we head to the airport in Da Nang and fly to Cambodia.
We got into Siem Reap around midnight-UGH!
